Crispy Baked Marinated Artichokes (Gluten Free)

These were soooo easy to make…and so good!

Ingredients

1 jar of marinated artichokes (drained)
1/4 cup cornmeal
3 tbsp ground Flaxseed
1 tsp vegetable boullion paste or 1/4 cube
1/4 cup warm water
Salt/Pepper
Dash Old Bay Seasoning

Preheat oven to 400 degrees. Begin by mixing flaxseed, boullion, warm water, salt, and pepper in a small bowl, and let sit for 5 min. In a separate bowl, add cornmeal, and a dash of Old Bay Seasoning, stir. Drain artichokes, before dipping in flaxseed, and then cornmeal, transfering to another bowl. When done, pour remaining cornmeal on artichokes, tossing to coat. Bake on parchment for about 20-25 minutes until a little crispy. Enjoy served with your favorite creamy plant based dressing, warm tomato sauce, or the just by themselves…these are so yummy!
