
This was one of those throw it together really quick recipes, working with a few fridge staples I usually always have on hand:
Tofu
Rice Noodles
Veggies
Spices
So to begin I boiled my rice noodles for 4 minutes, and drained, splashing a little cold water over them to stop cooking. I was using Eden Organic Rice Noodles today, and I use several different ones. Then I drained my tofu, which was Extra Firm from Trader Joes, dicing it in 1″ cubes.
I proceeded to chop up all my veggies for the dish, which would be napa, and broccoli, reserving the peeled chopped stems for a broccoli soup another day. I diced up half a large jalapeno, and about 2 tbsp of red onion. Those would go in the Spicy BBQ Peanut Sauce.
I set 2 cubes of ginger and 1 cube of garlic in a wok on simmer with 1/4 cup of water. You can use whatever fresh garlic and ginger you have too, or the kind in a jar.
While that was happening, I put 1/2 cup of water in a sauce pan with 3/4 cups of peanut butter, and 1/4 cup of bbq sauce (Trader Joes). I started to stir, and added in the onion, and jalapeno. You can add more or less water according to how saucy you want this, or if you want it stickier. Then I tossed in my tofu, stirring to coat, and covered it on low.

While the tofu was simmering in the delicious sauce, I put my veggies in the water with the ginger, and garlic, and stirred. I added 1/2 tsp salt, 1/4 tsp pepper, and 1 tbsp of turmeric, stirring well. Then I threw in a few cashews. I cooked this about 5 minutes, stirring occasionally, before combining with the rice noodles in the pan, when done.
Now I gave that tofu another stir, and served it all in a big bowl…so good! I hope you try this, and I encourage you to just experiment with what you have in the house.

Tip: Use up condiments before they go bad, by adding to sauces, and combining small amounts, to experiment with flavors. That mustard, salsa, ketchup, and BBQ sauce don’t last forever in the fridge. If you play around with flavors, you can use a condiment in an unexpected way.
Try Maple syrup, mustard, and chili powder…that’s a good combo!
