These energy bites are great to take on a hike with you, wrapped up in some wax paper, or tossed in a snack bag.
They use a few simple ingredients you probably have already in your house:
- Dates
- Oatmeal
- Almonds
- Lemon juice
- A dash of sea salt
- Cinnamon
I added almond extract, but if you don’t have that, try making them anyway, they are delicious either way.

Directions
Begin by placing 1 cup of almonds in a large food processor.
I have a Cuisinart, and if your thinking of buying one, I recommend that brand, the kind on a wide square base are best (old school design).

Then I put in a cup of oats, cinnamon, a dash of sea salt, and a cup of dates on top.



Start pulsing, and blend until it starts to get crumbly. I squeezed in 1/2 a lemon, and 1 tsp almond extract.



I kept it going until it started to be a ball on one side of the food processor.
These bars are a much smoother consistency than Lara Bars, but I prefer the texture of these, to store bought.
The almond extract really gives them a boost.

Now I had this big ball of almondy goodness, and it’s ready to press down, into bars.
You can use your hands, or some wax paper, whichever you prefer to press it flat.
You could use molds also, if you have those, or roll into a log, cutting into circles.
This is what I did, because I was going for efficiency, and just wanted them to be roughly the same size.
Feel free to make them any size of shape you want, they will taste the same.
These could be cute shaped as pumpkins, with an orange glaze, for October , or rolled into any shape, and decorated for holiday treats.
So these are a versatile, very basic recipe for energy bars to take with you on trail, or anywhere.
