Sunday Morning Gluten Free Dairy Free Bread

This bread is also completely plant based and vegan.

I started off this first Sunday in October with two slices of gluten free vegan avocado toast.

I had just a few slices of the homemade bread left, which I made a few days ago, and I knew it was time to bake!

Gluten Free Dairy Free Bread

Directions

Combine 2.5 cups of gluten free flour, 1/2 cup of almond flour, 1 tsp baking soda, 1 tsp salt, and 3.5 tsp of xanthum gum in a large bowl.

Mix with a whisk and break up any chunks.

Measure out 1 1/3 cups of filtered water in a separate measuring cup or bowl.

Add in yeast to warm, but not hot water, and let it activate for at least 15 minutes.

In a small bowl mix 4.5 tsp of Energee Egg Replacer with 6 tbsp of cold water.

Use a spoon, or mix with your fingers to break up chunks, and make a slurry.

Add 1/4 cup of olive oil, and 1 tsp apple cider vinegar to that, and mix.

After yeast is active, combine all wet and dry ingredients, and knead with a spatula.

You can also use a dough hook in a kitchenaid stand mixer. I don’t have one of those, but it’s on my wishlist!

A Few Tips

Make sure your water is unchlorinated. Tap water, and even filtered tap water has chlorine. You can remove it by boiling it for 20 minutes. If it’s Spring Water, or distilled you can just use it out of the bottle.

Time to Bake

Bake your bread on a gluten free setting in a bread machine.

I have a Zojirushi, that I am quite happy with, which has been churning out delicious loaves.

You can also use a dutch oven lined in parchment paper, baking it at 375 degrees for about 60 minutes.

Covering a bread pan, with another same sized pan, will allow it to steam a bit, which is important to get that rise happening.

If you bake the bread in the oven, you will want it to stay uncovered for at least 15 minutes to brown the top.
